Ume Japanese Cuisine invites guests to experience Sake Stories, an exclusive six-course pairing dinner with a Kikizakeshi or Sake Master. Designed as an immersive narrative, the evening celebrates the seamless harmony between traditional Japanese culinary arts and time-honored brewing techniques.


Instead of a traditional menu layout, guests will journey through a story told across six distinct chapters—each dish meticulously crafted to showcase Japan’s rich terroir and complemented by rare, hand-selected sakes.

  • Oceanic Elegance & Heritage Brewing
    Early chapters transport diners with a vibrant
    Scallop, Akami Tuna & Avocado Tartare, combining sweet Hokkaido scallop, premium tuna, and avocado finished with a touch of wasabi mayonnaise. This dish is paired with Kuroushi Junmai Ginjo Omachi, a sake celebrated for its rich, heirloom-rice structure that lifts the fresh seafood effortlessly.
  • Centuries of Tradition
    The mid-menu narrative pays homage to classic Kyoto techniques with Saikyo Miso White Fish, slowly grilled until lightly caramelized to unlock a buttery texture and signature sweetness. To match its rich umami, the course is paired with Schichida Junmai Yamahai Umakuchi, a traditionally brewed sake with complex, deep-set flavor notes.
  • The Pinnacle of Craft
    The experience builds to a luxurious climax in Chapter V, showcasing Premium A5 Japanese Wagyu Striploin served alongside silky potato purée and seasonal vegetables to highlight authentic Japanese marbling. This showstopping course is paired with the extraordinary Izumibashi Dragonfly White Junmai Kimoto, aged for two years to deliver the robust depth required to stand up to authentic Wagyu.


The journey begins with an unpaired course featuring silky Kani Chawanmushi & a Miso Cream Cheese Tartlet, weaves through comfort classics like Tempura Soba paired with Chiyomusubi Junmai Tokubetsu 55, and concludes with a serene Black Sesame & Soy Panna Cotta—leaving the full multi-sensory experience a delightful story to uncover at the table.

Throughout the tournament, Team bai brought energy and enthusiasm to every event, representing bai Hotel Cebu with pride both on and off the playing field. The competition culminated on July 12 in a vibrant celebration of sportsmanship and camaraderie among Cebu’s hospitality community, where Team bai's achievements reflected the dedication and unity of its athletes, performers, and support team. The final day also featured a meaningful tribute to the late Alfred Reyes, former Vice President for Operations and General Manager of bai Hotel Cebu. At the heart of the commemoration was the Alfred Reyes’s Cup, a basketball exhibition match between the City All-Stars and Island All-Stars, honoring his enduring legacy and contributions to the hospitality industry. Among Team bai's notable achievements were a championship finish in Mixed Badminton, second-place honors in Cheerdance and Ms. HRRACI, and a third-place finish in Table Tennis. The team likewise advanced to the semifinals in Men’s Volleyball and the quarterfinals in Mobile Legends, demonstrating competitive excellence across a diverse range of events.
