Experience an Exquisite Five-Course Sake Pairing at Ume Japanese Cuisine

For those who appreciate the art of fine dining, Ume Japanese Cuisine presents a five-course sake pairing experience that showcases the delicate harmony between Japanese cuisine and expertly selected sake.

Sake, Japan’s revered rice wine, is a true expression of tradition. Each variety in this pairing carries notes that complement the textures and flavors of every dish. This March 30, a culinary expedition awaits you, jetting you off a plane and bringing you straight to Japan.


We’re starting off strong with Duck Misoyaki for the first course, a baked duck marinated in sweet miso paste, paired with the light and refreshing Mio Sparkling Sake. Alongside this is the Seared Tuna Carpaccio, thinly sliced and served with vegetables and a spicy soy vinaigrette, complemented by the clean, gentle rice flavor notes of Hakkaisan Junmai Ginjo. The first course concludes with Salmon Caprese, an amalgamation of house-smoked salmon, cheese, fruit, and vegetables, balanced by the acidity of Shichida Junmai Ginjo 13.


The second course takes you on a coastal adventure with Red Snapper Dry Aging Sashimi, cured with kelp and served with a soy seaweed seasoning sauce. This dish is paired with warm Gekkeikan Hot in Junmai Daiginjo, which highlights the depth of its umami flavors.

Now, for the main event, the third course features Charcoal-Grilled Angus Beef Tenderloin, served with soy vinaigrette and paired with Shichida Junmai Yamahai Umakuchi, a sake known for its rich, bold taste that enhances the smoky tenderness of the beef.


As we near the end of this adventure with the fourth course, the Deep-Fried Shrimp and Vegetable Tempura offers a light, crispy bite, coated in Japanese tempura batter and balanced by the smooth, slightly fruity Kuroushi Junmai Ginjo Omachi.


Finally, the Chasoba Salada delivers a satisfying conclusion with green tea-flavored buckwheat noodles and vegetables, paired with Chiyomusubi Tokubetsu Junmai, a sake with earthy, umami notes that provide a refreshing finish.

Expanding its commitment to community-driven sustainability, bai Hotel Cebu has officially partnered with the Bureau of Jail Management and Penology (BJMP) Mandaue City Jail Female Dormitory to launch an income-generating hydroponic garden initiative inside the BJMP facility. The collaboration was formalized through the signing of a Memorandum of Agreement (MOA) between representatives of bai Hotel Cebu and the leadership of the BJMP-Mandaue City Jail Female Dormitory. Under the bai for Life sustainability program, the initiative establishes a direct pipeline between the facility’s agricultural output and the hotel’s culinary operations. Managed directly by Persons Deprived of Liberty (PDLs), the hydroponic garden serves as a hands-on platform for rehabilitation, vocational training, and skill-building. The produce harvested from the vertical garden system will be purchased directly by bai Hotel Cebu to supply its dining outlets, guaranteeing a reliable market for the crops.

The final day also featured a meaningful tribute to the late Alfred Reyes, former Vice President for Operations and General Manager of bai Hotel Cebu. At the heart of the commemoration was the Alfred Reyes’s Cup, a basketball exhibition match between the City All-Stars and Island All-Stars, honoring his enduring legacy and contributions to the hospitality industry.
